Ask you local finer restaurants if the will buy them for next harvest season. and see if the produce manager will buy some for a local grown theme in their counter. I would use raised beds for this and plenty of them. You can invite the chef to come and pick their own daily if you like, if you grow different mints, such as lemon balm, peppermint, chocolate and so on, make sure they are plant in a container down in the ground or they will take over your whole garden.

For your own use, grow what you like. For profit, grow what others need. Research your market and see what herbs are in demand by local chefs. Develop a rapport with them and satisfy their needs.

Remember, just like in any business, marketing is the most important part of your business, and a big part of any marketing effort is producing a consistent, quality product.

Local farmers markets are also a good outlet, visit them and see what there is in abundance and see what might be lacking. Produce prices strictly follow the economic law of supply and demand, so items like ordinary basil, parsley and oregano will not fetch the same prices as some of the more exotic herbs. As part of your marketing effort at the farmers market, give your customers recipes that use the specific herbs that you are selling to get them thinking about how good your herbs are going to taste on their dinner table.

Whatever you decide to grow, keep it strictly organic and you will be able to get a higher price for your product.
